Well this is the hard part, what to joint down for my first post? Let’s make it an easy introduction with two toast recipes! If you know me, there’s a good chance any conversation we have will include a detailed discussion about a recent meal, recipe, or restaurant.
One thing I can’t stand about recipes on the internet are the long drawn out life stories about how ever pinch and dash has a profound meaning to life. Not here, maybe a paragraph about the recipe, who I’ve made it with, but no novel. Who has time for that?
Two simple toast recipes – my favorite avocado toast, and a delicious ricotta toast recipe that I learned from my Italian relatives.
Go-to Avocado Toast:
– 1 or 2 Slices sourdough bread (the good stuff, 3-4 ingredients no more)
– (1) Ripe avocado
– Sea salt
– Pepper
– Red pepper flakes
– Extra virgin olive oil (again the good stuff, 100% Italian if you can find it)
Toast the sourdough, smash the avocado and top! One avocado is usually enough for two medium slices of bread – spread it on, sprinkle the salt, pepper and red pepper flakes, and drizzle with EVOO – while your at it, take a teaspoon.
Enjoy! I have a few variations I’ll sprinkle through my blog.
Ricotta Toast (which was introduced to me by my relatives while studying abroad in Italy):
– Sourdough bread (again, the good stuff)
– Whole milk ricotta
– Walnuts (crushed)
– Honey
Super simple – toast the bread, slather on the ricotta, sprinkle with walnuts and drizzle with honey, and that’s it. So simple and it’s actually a great party appetizer on crispy crostini toasts.
